(Delicious and sometimes secretly nutritious! Added nutrition helps boost immunity, which is important during a pandemic!)

1. Harbor Special Bagel

(From our years living in Dana Point, California, and going to the harbor for Saturday brunch)

  • Toast the bagel
  • Mash avocado
  • Add pink salt and lemon
  • Thinly slice red onions and tomatoes
  • Once bagel toasted, spread the avocado
  • Place sliced tomato and onion on top
  • Then sprinkle the lemon pepper

This is great because it can be breakfast, or a snack, or lunch, or dinner.

2. Ethiopian Popcorn

(We learned this when we went to Ethiopia to adopt two of our five children.)

  • Put the oil in the pan
  • Put in the popcorn—we like gourmet blue or purple popcorn
  • Sprinkle pink salt into the pan BEFORE you pop
  • Then pop!

Once popped, it is already salty, so don’t have to add butter to make the salt stick. We like to put parmesan cheese on it (but this is NOT Ethiopian) 🙂

3. Stealthy Smoothie

  • Variety of frozen fruit
  • High-nutrition but mild-flavor frozen veggies (like butternut squash, cauliflower, sweet potato, etc.)
  • Fresh veggies such as spinach or carrots
  • Orange juice or grape juice
  • Put it all in a high-powered blender
  • Mix until pulverized and then we enjoy them immediately

4. “Nutrispie” Treats

(Rice Krispie treats with some added nutrition)

  • Brown rice cereal
  • Flax seed, almonds, or pumpkin seeds
  • Marshmallow and vegan or grass-fed butter

Adds vitamin A, omega 3s, fiber and my kids love them.

5. Marinated Cucumber Salad, Hummus, and Naan

  • Sliced cucumbers, onions, tomato, vinegar, and sugar
  • (Can add watermelon when available to make it amazing!)
  • Carrot or red pepper hummus
  • Naan
  • Baked tortilla chips
  • Carrots

(Some snacks can be meals.)
